These Vegan pancakes are easy to make and so delicious you wouldn’t believe they are made with out eggs and dairy.

The only difficult part is not eating them all as you cook them!

Ingredients –

250g plain flour

50g caster sugar

2tsp baking powder

1/2 tsp salt

275ml almond milk

30ml vegetable oil

For serving

Golden syrup

Fresh berries

Method 

Combine the dry ingredients in a bowl.

In a large bowl or jug combine the almond milk and vegetable oil. Slowly add the dry ingredients, whisking thoroughly until the mixture is smooth.

Carefully place a spoonful of mixture into the centre of the hot, non stick frying pan.

When bubbles start to appear around the edge and in the centre, gently loosen the edges of the pancake with a palette knife, give the pan a shake then perform the obligatory pancake toss.

Cook for 1 min on the other side then turn onto a warm plate.

Serve with fresh berries and a drizzle of golden syrup.
