National Peanut Butter Day

National Peanut Butter Day is a holiday which falls annually on January 24th. Creamy or chunky, with chocolate or with jelly,  peanut butter has been an American staple for generations.  Peanut butter is a good source of Vitamin E, B6, niacin, calcium. potassium and iron. It is also packed with protein and rich in healthily monounsaturated fat. Celebrate National Peanut Butter Day with our recipe for these delicious Peanut Butter Cupcakes.

Peanut Butter Cupcakes

Ingredients:

For the cupcakes

Unsalted Butter 75g

Peanut Butter 135g ( I prefer crunchy but you can use smooth)

Plain Flour 250g

1 large egg

1/2 teaspoon salt

1/2 teaspoon baking powder

180ml milk

For the buttercream

Peanut Butter 125g

Icing Sugar 250g

3 teaspoons honey

3 – 4 tablespoons milk

Dark Chocolate (optional)

Method

In a large bowl, or electric mixer, cream together the butter, peanut butter and brown sugar until light and fluffy. Beat in the egg. Combine the dry ingredients. Add to the creamed mixture alternately with milk, mixing well with each addition.

Fill 12 paper muffin cases two- third full. Bake at 175oC for approx 20 mins (until a toothpick inserted comes out clear). Turn out on a wire rack to cool.

Peanut Butter Cupcakes

To make the butter icing combine the peanut butter and icing sugar in a bowl. Add the honey and mix. Beat in enough milk to achieve a spreadable consistency. Spread over the cupcakes and smooth with the back of a teaspoon. If you wish to pipe the buttercream I would advise using smooth peanut butter so as not to block the piping nozzle.  Top with a piece of dark chocolate (optional).
